Abstract: The article reconstructs and analyses the municipal architect Gioacchino Ersoch’s (1815-1902) contribution to the process of modernization undertaken in the sector of public slaughterhouses and markets in Rome during the nineteenth century. Ersoch’s activity was always based on production needs and aimed at the creation of structures suitable for advancing competition. Unfortunately, with the exception of the Mattatoio (slaughterhouse) 1889-1891 at Testaccio, the various municipal administrations that followed each other over time, whether due to chronic budget difficulties or to the absence of a genuine desire to plan a new food market layouts, never took advantage of his ability and his thorough knowledge of the mechanisms governing city food provisioning and distribution.
